Resolution Recipes don't have to be difficult; just "new". The Twelfth Night plague has completely kicked my ass, to the point that I have no energy similar to when I had pneumonia. (I don't think I have pneumonia. I just have no energy, physical or mental.) Hence this very easy recipe that is nothing new, yet is a new Resolution Recipe.

1 Tbsp yellow onion, peeled and chopped
1/2 cup mushrooms, cleaned and sliced
1/2 Tbsp butter
salt and pepper
pinch of nutmeg
1 Tbsp vermouth or sherry
2 eggses
2 tsp water
olive oil or butter
1 tsp lemon juice

Saute the onion and mushrooms in the butter. Add the salt, pepper, nutmeg, and vermouth or sherry. Saute for a moment to reduce the moisture.
Heat the omelet pan on medium high. Whip the eggses; add the water and whip again. Place the grease in the pan. Whip the eggses a bit more and pour into the pan. When it begins to set, add in the filling. Fold the omelet over, cook very slightly, and serve hot.

What worked: It was an omelet.

What didn't: It was an omelet.

Will I make it again? I'll probably just make an omelet.

Garlic would have improved it, as would a bit of cheese. But I played it straight.

It's a rare recipe which is not improved by garlic.

I keep trying to develop a taste for omelets and keep failing. Scrambled eggs? You bet. Omelets? Just not doing it for me.

Hope your energy returns soon. That 12th Night crud seems to have kicked many asses.

This was the worst 12th Night plague I've experienced in a long time. Usually it's a crud that goes away after a few days. This one has taken ten and counting.
