Hand-waving
Apr. 14th, 2014 12:56 pmLast week's Resolution Recipe, which I made yesterday: Chocolate Walnut Cookies.
6 oz 70% bittersweet chocolate, broken into pieces
2 T unsalted butter
2 large eggses
7/8 cup sugar
1/4 tsp salt
1/4 cup flour
1/4 tsp baking powder
1/2 cup chopped walnuts
Melt chocolate and butter. In a large mixing bowl, beatLA the eggses, sugar, and salt at high speed for 2-3 minutes until light. Add the chocolate on low speed to blend. Mix in the flour and baking powder. Scrape the sides, then mix in the walnuts. Cover the bowl with plastic wrap and chill until firm enough to scoop, at least 30 minutes or overnight.
Heat oven to 350. Line a baking sheet with parchment. Scoop heaping spoonfuls onto the sheet, allowing two inches between cookies. Bake for 12-14 minutes, until puffed and crinkled on top but soft in the center. Cool for 3-5 minutes before removing.
What worked: These were excellent. Slightly crackly on the outside, like a meringue, but fudgey on the inside. Good chocolate flavor without being cloyingly sweet.
What didn't: I made them into balls; smashing them would have produced flatter cookies, but that might have made them crackly all through. That might not be bad, but it'd be different.
Will I make it again? Sure. I don't make cookies very often, but these were nice.
