This week's Resolution Recipe, which I was supposed to make for dinner Saturday at Beltane. But didn't, because of meetings and also being stuffed from grazing on tasty, tasty meats all day: Peas for a day of Lent.
Take tender peas, and for the day of Lent you shall cook them in water with fresh butter, and a small amount of Marzolino cheese [fresh sheep cheese] cut very small, or other good cheese. (Messisbugo, 1549)
1 lb peas
2 Tbsp salt butter
1/2 ounce Parmesan cheese, grated
Barely cover the peas with water. Add the butter. Bring the water to a low boil and simmer for 10 minutes. Drain, mix in cheese, and serve.
What worked: Certainly easy.
What didn't: Boooooring. Maybe using a sheepier cheese would help, but I doubt it.
Will I make it again? Nah.
