This week's Resolution Recipe: Garlic Soup with Poached Egg.
2 cups broth
3 sage leaves
3 sprigs thyme
1 bay leaf
3 cloves garlic, sliced, plus another for rubbing on bread (Ha! I used... more.)
salt
white vinegar
1 thick slice bread, toasted and rubbed with raw garlic
1 egg
sauteed greens
olive oil
Heat broth in a small pot with the herbs. Once it comes to a boil, remove the herbs and add the sliced garlic along with some salt. Simmer for 10 minutes. Place a slice of garlic-rubbed bread at the bottom of a soup bowl and drizzle with oil.
Crack the egg into a teacup. Add a drop of vinegar to the soup, then lightly tip the egg into the soup. Cook egg until the white is set and the yolk is still soft.
Heat the cooked greens in a small pan and place a scoop on the toast before adding the egg and soup. Ladle the egg onto the bread and top with freshly ground pepper. Pour soup around egg. Drizzle the top with more olive oil.
What worked: It was easy and smelled of garlic.
What didn't: It was uninspiring, surprisingly enough.
Will I make it again? Nope.
