Next week's Resolution Recipe, which I don't feel like waiting to post: The Panacea Cocktail.
"This mix of Scotch, ginger, honey, and lemon may not cure your cough. But it sure will make you feel good."
1 cup honey
1 cup water
1/2 cup minced ginger
3/4 cup fresh lemon juice
2 ounces blended Scotch
1/4 ounce Islay single-malt Scotch (you want smoky - traditional is Laphroaig, but Lagavulin works well too)
garnish: slice of ginger and candied lemon peel (I used a cube of candied ginger)
In a small pot over medium heat, simmer honey, water, and minced ginger until the mixture cooks down to a thick syrup, 10 minutes. Strain through a fine-mesh sieve, pressing on solids to extract liquid. Discard the solids. Add lemon juice to syrup and stir. Cover and chill.
In a tumbler half-filled with ice, stir together 2 ounces of the syrup and 2 ounces blended Scotch. Pour the Islay single-malt over the back of a spoon so it floats on top of the drink. Garnish with a slice of ginger and lemon peel.
What worked: Oh, this was glorious. Scotch cocktails are somewhat difficult to successfully do; this one nailed it.
What didn't: I could drink waaaaaay too many of these.
Will I make it again? Damn straight.
