Last week's Resolution Recipe, which I genuinely made last week but haven't posted until now: Chile-Glazed Salmon.
2 4-oz salmon filets
1/4 tsp salt
1/3 cup water
1/4 cup apple cider vinegar
2 Tbsp honey
1 Tbsp chili paste
1 Tbsp minced fresh ginger
1 tsp soy sauce
Heat oven to 425. Sprinkle salmon with salt and bake for 8 minutes. Meanwhile, in a small saucepan, combine all the glaze ingredients, stirring to dissolve the honey. Bring to a boil, lower heat to medium-low, and cook down for 2-3 minutes until slightly thick. Remove salmon from oven, brush thoroughly with glaze, and put under broiler for 2 minutes. Remove from oven and serve.
What worked: A nice, easy sauce.
What didn't: It isn't this recipe's fault that our toaster oven conked out. However, this never reduced to thick when on the stove. At all. So the flavor was dilute and it didn't have the texture.
Will I make it again? I might try it to see if I can actually get this to glaze status. We liked the flavor.
