This week's Resolution Recipe: Chocolate Bread Pudding.
1/2 to 1 cup sugar (I used 1/2)
2 cups milk
4 to 6 Tbsp cocoa (I used 6)
(I added: 1/2 tsp cinnamon)
2 cups cubed stale bread
2 Tbsp unsalted butter
2 large eggses
1/4 tsp salt
1 tsp vanilla
Mix the sugar into 1/2 cup milk. Add the cocoa, heating enough to melt and dissolve them. Place the bread cubes in a 8" square baking dish. When the sugar is dissolved and the milk mixture is hot, stir in the butter. Add the remainder of the milk. Beat in the eggses and stir in the salt and vanilla. Pour over the bread cubes. Let soak for 15-20 minutes, then bake at 350 for 30-45 minutes until it passes the toothpick test.
What worked: This was very nice. With a dark chocolate, not too sweet, and hint-of-cinnamon flavor, it hit just the right notes for me.
What didn't: It passed the toothpick test and I left it in the toaster oven while we ate dinner. When I started to scoop it out, it had liquid on the bottom... and the bread disintegrated a bit into moosh rather than being a coherent mass. We served it in bowls with a bit of vanilla ice cream to make it up.
Will I make it again? Yup. It's a nice dessert.
