This week's Resolution Recipe: Miso Brownies.
14 Tbsp unsalted butter
7 oz 64% dark chocolate
3 Tbsp + 1 tsp shiro (white) miso paste
1 cup + 2 Tbsp confectioners' sugar (No! It's mine now!)
5 Tbsp flour
8 tsp cocoa powder
4 large eggses
Heat oven to 350. Lightly grease an 8x8" pan and set aside.
In a double boiler, melt chocolate, butter, and miso over steadily simmering heat. In a medium bowl, whisk together sugar, flour, and cocoa power. (Sic. I used cocoa powder.) Gradually whisk dry ingredients into melted chocolate mixture. Remove batter from heat and whisk in eggses one at a time. Pour into greased pan and bake until a cake tester comes out clean, 35-40 minutes.
What worked: They were decent cakey brownies.
What didn't: I couldn't tell that the miso was in there. I like walnuts in brownies; plus I fall firmly on the side of chewy brownies rather than cakey. Fudgey is fine too.
Will I make it again? Probably not.
