4 boneless skinless chicken breasts
a bunch of pesto (I used house-made)
a bunch of tomatoes, sliced (I used dry-farmed Early Girls)
mozzarella cheese, grated
Spray 9x13 pan lightly with oil. Place chicken in the pan. Spread pesto over the breasts. Snigger. Layer tomatoes on top of the breasts. Snigger again. Cover with cheese. Bake at 400 for 20 minutes. Eat.
What worked: It was pretty good. Very easy.
What didn't: Eh, not exciting. Although it would have been much less so if I'd used commercial pesto.
Will I make it again? Probably, just because it's easy and we generally have the ingredients around.
