Banh Mi, part deux
Sep. 6th, 2016 02:07 pmThis week's Resolution Recipe: Bahn Mi sandwiches.
1 24" baguette
2 Tbsp mayo
1 Tbsp fish sauce
1/2 tsp soy sauce
1/4 lb liverwurst (I used Chicken Liver Mousse)
2 fresh jalapenos, thinly sliced
basil and cilantro
pickled daikon
2 cooked chicken breasts, thinly sliced
Heat oven to 350 and heat baguette for 5 minutes. Cut off and discard round ends, then split baguette.
Mix together mayo, fish sauce, and soy sauce; brush on both sides of bread. Spread the liverwurst (mousse) on the bottom layer of bread and top with chiles, basil, and cilantro.
Arrange chicken and pickled daikon on top of the cilantro and basil. Cut sandwich crosswise into fourths.
What worked: This was good. It tasted like a banh mi sandwich from one of the local shops.
What didn't: It was messy, with lots of things falling out of it. I only used about half the chicken.
Will I make it again? I already have.
