This week's Resolution Recipe: Sicilian-Style Green Beans.
1 kg green beans
1/3 cup olive oil
5 cloves peeled garlic (Ha! I used... more.)
8 anchovy filets
1 cup fine bread crumbs
salt
Prepare green beans by splitting them in half lengthwise. It's a bit fiddly, but once you get going you get the hang of it: place each bean on a cutting board, then use a long knife to split them in half.
Bring a large pot of salted water to boil, and add beans. Cook until very tender. Drain. In a saute pan large enough to hold all the beans, pour in the oil. Add the garlic cloves (unchopped). Turn heat to medium and slowly heat the oil. Let cook until the garlic becomes fragrant and begins to color. Add anchovies, stir a couple times, and then add drained beans.
Turn up the heat a bit, and stir to coat beans and heat them through. Stir until the anchovies dissolve and then add the bread crumbs. Continue to stir while the bread crumbs absorb all the flavors and coat the beans in a rich, thick sauce. Taste and adjust for seasoning as needed. The anchovies will have added a lot of salt. Serve warm.
What worked: It was fine. I made about 1/3 recipe and we ate them all.
What didn't: This was way too fiddly and time-intensive for the outcome. I'd rather just steam some green beans with a bit of lemon pepper.
Will I make it again? Doubtful.
