Hash Tag: Resolution Veg

This week's Resolution Recipe: Shrimp with Corn Hash.
2 tsp olive oil
1/2 lb large shrimp, peeled and deveined
1/4 cup chopped red onion
1/2 medium red bell pepper, diced
3/4 cup corn kernels (we used frozen)
1/2 cup halved cherry tomatoes
1/4 tsp crushed red pepper
2 Tbsp water
1 1/2 tsp lemon juice
1 Tbsp chopped fresh basil
Heat 1 tsp oil in a large skillet over medium-high heat. Add the shrimp and cook, stirring occasionally, until opaque - 3 to 5 minutes. Remove to a plate.
Heat the remaining 1 tsp oil also over medium-high. Add the onion and belp and cook until softened, about 1 minutes. Add the corn, tomatoes, and crushed red pepper. Cover and cook until heated through, about 3 minutes. Add the shrimp and reheat, stirring often, about 1 minute. Stir in the water and lemon juice. Scrape up any fond with a wooden spoon. Transfer to a bowl and sprinkle with the basil. Serve hot.
What worked: Delicious. Easy, with frozen corn and frozen shrimp (although I'm sure fresh in summer would be divine).
What didn't: I was pretty happy with it.
Will I make it again? Yes.
