Whether soup? Soup weather.
Feb. 27th, 2017 01:36 pmThis week's Resolution Recipe: Sauerkraut Soup.
1 large onion, chopped
3 slices bacon, chopped
1 clove garlic (Ha! I used... more.)
1/2 lb pork stew meat, chopped
2 cups sauerkraut (I used house-made)
1 Tbsp tomato paste (ditto)
1/2 tsp paprika
pinch caraway seed
8 cups brown soup stock
roux of 1 Tbsp each flour and butter
pepper and sour cream to taste
Render the bacon, then brown the onion and garlic in it. Add the pork, and cook for about 20 minutes. Add the sauerkraut, tomato paste, paprika, caraway, and soup stock. Simmer for about 45 minutes until the kraut is soft. Thicken with the roux, and correct seasoning as needed.
Serve hot with a garnish of sour cream.
What worked: This was a good hearty meal on a cold evening. We often make a lighter-meat version of this with pink beans, but it was pretty good without.
What didn't: I still have way too many jars of sauerkraut. I am also out of caraway seed.
Will I make it again? Sure.
