This week's Resolution Recipe: Mushroom Sauce.
"This versatile preparation can be used as a stuffing for ravioli or to sauce meat; blended with cream for a sauce; or simply served as a bed for sauteed or roasted fish, which is what I recommend here."

1 1/2 Tbsp (!) rapeseed oil
1/2 lb button mushrooms, finely diced
1 shallot, minced
salt and pepper
1/4 cup white wine
1/8 lemon
1/8 tsp curry powder
1 Tbsp unsalted butter

Heat a large saute pan over high heat until very hot. Add the oil and swirl it in the pan to coat the bottom. When it starts to smoke, add the mushrooms in a single layer and press them down with a spatula to sear them well, about 30 seconds. Add the shallot and stir, cooking them another 30-60 seconds. Add a pinch of salt and several grindings of pepper. Add the wine and cook, stirring, until the wine is nearly gone. Season with a squeeze of lemon and the curry powder. Swirl in the butter and serve.

What worked: It was a tasty bed for some roasted sirloin. Pretty easy to make, once we got past the drudgery of washing all those mushrooms.

What didn't: Eh, it wasn't that exciting even if it was good.

Will I make it again? Eh, maybe and maybe not.
