One of the apple guys at the farmers' market had quinces. So now my weekend project list has suddenly expanded to making cotignac.

It was! I have yet to successfully re-create it; like apples, quinces have varieties that contain different amounts of pectin, reddening, and scent/flavor.
I have no idea what that original varietal was. All of the apple guys just sell "quinces".
