This week's Resolution Recipe: Rum Raisin Rice Pudding.
1 1/3 c whole milk
2/3 c cream
3 large eggses
1/2 cup sugar
1 tsp vanilla
1 Tbsp rum
2 cups cooked white rice
1/2 cup raisins
1/2 cup chopped toasted pecans
Fill a water bath with water (Duh!) and set the sous vide recirculator to 183.
Whisk together the milk, cream, eggses, sugar, vanilla, and rum until smooth. Stir in the cooked rice and raisins. Pour the mixture into a Ziploc or vac-seal bag and seal. Make sure that the rice mixture is in an even layer in the bag. Place in the water bath and cook for 40-45 minutes.
Spoon into serving bowls and top with the toasted pecans.
What worked: I used currants instead of raisins; the wife is not fond of raisins. It was fine. The rum came through nicely when the pudding was cold.
What didn't: I prefer the bain-marie set custard type of rice pudding; this was not that. It was more scrambled-custard, although cooked nicely.
Will I make it again? Perhaps. But I still like custardy rice pudding better.
I fully expect that no one will get the tortured joke/obscure reference in the header, although Chaz might prove me wrong.
