A stick.
This week's Resolution Recipe: Sticky Red Onions.

2 red onions
50 ml olive oil
salt and pepper
2 cloves garlic, crushed (Ha! I use... more.)
2-3 sprigs fresh thyme
1 Tbsp honey
50 ml balsamic vinegar
5-6 mint leaves, chopped

Heat the oven to 350 F (160 fan). (Which I now say in GBBO voice.)
Trim the top and root off the onions and slice into 3/4" thick rounds. Lay the onions out in one even layer on a roasting tray. Drizzle over the olive oil and season with salt and pepper. Scatter the garlic and thyme around, and bake for 25 minutes.

The onions should be starting to soften and colour. Take out, drizzle over the honey and balsamic, and bake 20 minutes longer. Remove from the oven and throw away the thyme sprigs. Give everything a stir with the mint leaves, then serve in a bowl.

What worked: As promised, these were a good garnish with roast leg of lamb. They kept nicely and went as a savory on a few other things that week.

What didn't: The honey and balsamic made a mess. The pan warped a bit in the oven, which made things worse. I used a Silpat sheet, but it was 1/2" smaller than the pan and the oozing/baking honey/balsamic was mildly terrifying when baked on. It did clear up relatively easily after soaking in hot water, although the Silpat took several washings to stop smelling like onion.

Will I make it again? Probably. Relatively easy and different.
