Soubise, or Not Soubise

For each person take:
1 egg (I used duck)
1/4 to 1/2 onion, shredded finely
(I added: one clove garlic, minced)
1/2 Tbsp butter
2 Tbsp cream
salt and pepper
Fry the onion in the butter until golden brown, place in a ramekin (ramekin ramekin), break the egg on top, cover with the cream and a sprinkling of salt and pepper. Bake at 375 for 5-10 minutes until the egg has just set.
What worked: Delicious, and punched above its weight in tasting rich without being too much. Very easy.
What didn't: It took closer to 15 minutes for the duck egg to set, although I expected that.
Will I make it again? Absolutely. It'd be a great guest breakfast. Maybe with a couple of chive antennae to give it a splash of green...
