Aug. 27th, 2018 11:36 amThis week's Resolution Recipe: Grilled Padrón Chiles with Fish Sauce and Lime.
1/2 lb padrón chiles
1 Tbsp olive oil
salt and pepper
1 1/2 tsp fish sauce
lime juice
Toss chiles with oil on a baking sheet and season with salt and pepper. Grill over medium-high heat until blistered on all sides, about 5 minutes. Transfer to a plate and drizzle with fish sauce and lime.
What worked: Yum. A nice alternative to how we usually prepare them (a tapas combination of shrimp, garlic, and mushrooms in olive oil). It was a tasty summer dish and the fish sauce did not overpower.
What didn't: My pan was too small and they didn't cook as evenly as I would have liked.
Will I make it again? Probably. We tend to get padróns a few times during the summer.
