This week's Resolution Recipe: Buttermilk Aebleskivers.
2 eggses
2 cups buttermilk
2 cups flour
1 tsp baking powder
1 tsp baking soda
1/2 tsp salt
2 Tbsp sugar
1/4 cup melted butter
more melted butter for pan
Separate the eggses; beat whites until soft peaks form and set aside. In another bowl, combine the yolks and buttermilk, and mix together. Add dry ingredients all at once. Add melted butter and mix until blended. Fold in the egg whites with a rubber! spatula.
Heat an aebleskiver pan over medium heat. [Too hot will burn the outside before the inside cooks.] Brush each cup with melted butter. Pour about 2 Tbsp batter into each cup, and when bubbly around the edges, turn with a long wooden skewer. This takes less than 2 minutes. Cook on the other side until golden.
If you would like to fill the aebleskiver, place 1 Tbsp batter in the pan, dollop a tsp of jam, then top with 1 Tbsp batter. Serve sprinkled with powdered sugar, along with jam and butter.
What worked: I've had too many homemade aebleskivers that were lead balls. This recipe pulls out all the stops to avoid that: buttermilk, chemical leavening, egg whites. It worked pretty well and they made a tasty breakfast.
What didn't: About 90 sec per side was a good place to start. The center one cooked much quicker than the rest. Also, we don't have any wooden skewers so I tried using a crab pick (didn't work) and a metal skewer (better but still not as effective).
Will I make it again? This would be the recipe I would use. It's been at least 15 years though, and I think we're getting rid of our pan because we don't have tons of storage space for things we don't use.
