This week's Resolution Recipe: Chocolate Cornstarch Pudding.
1/2 cup sugar
3 Tbsp cocoa powder
1/4 cup cornstarch
1/8 tsp salt
2 3/4 cups milk (I used 3/4 cup cream and 2 cups milk)
2 Tbsp unsalted butter, room temperature
1 tsp vanilla
In a saucepan, stir together the sugar, cocoa, cornstarch, and salt. Place over medium heat and whisk in milk. Bring to a boil and cook, stirring constantly, until the mixture thickens enough to coat the back of a metal spoon. Remove from heat and stir in the butter and vanilla. Let cool briefly and serve warm, or chill in the fridge until serving. Serves 4.
What worked: No-frills chocolate pudding of my youth. Delicious, perfect pudding texture, and exactly what I was looking for: like what you get out of a box, but better.
What didn't: Since I served it for dessert at our homeowners' meeting, there weren't any leftovers.
Will I make it again? Easy, relatively quick, and yummy. Absolutely.
