Ham-a-Leekie

2 leeks, white part only, sliced thinly
1 large onion, sliced thinly (I used more leeks instead)
3 Tbsp butter
1 Tbsp flour
1/2 tsp salt
1/8 tsp pepper
1/8 tsp nutmeg
4 eggses, slightly beaten
1 cup milk
1/4 lb cooked ham, diced
9" pie shell
In a large skillet, saute leeks and onion in butter until tender. Combine flour, salt, pepper, and nutmeg; stir into onion mixture. Gradually stir in milk. Cook and stir until mixture thickens and begins to boil. Stir some into the eggses, then add eggses mixture to skillet. Stir in ham. Pour into the pie shell. Bake at 400 for 30 minutes, or until a knife test emerges clean.
What worked: This turned out better than I expected - I thought it would be a stodgy quiche, but it tasted really good. It probably helped that I made the crust using rendered suet from a house-made brisket, and used a high-end ham.
What didn't: It would have been nicer with garlic to complete the allium trilogy.
Will I make it again? I might. It won't be a regular, but it's pretty easy.
