I'm trying to be better about what I'm eating. Partly because the wife is doing so (and making excellent progress!) and mostly because I do need to.

Hence, this week's breakfast regimen of oatmeal. I cooked a cup of steel-cut oats in the Instant Pot, which took four minutes instead of hours. Then portioned it out into four containers for nuking at work. (I don't have time in the morning, nor do we have a microwave at home.)

Today was the standard - frozen blueberries for sweetness and cinnamon, ditto. I forgot to add a handful of walnuts (which I really need to do for crunch and stomach satisfaction). I can see that I'm going to need variety; maybe I'll make tomorrow's savory and add a small dollop of miso paste, green onion, and sesame oil. I might even top with an egg if I have the time in the morning.

It may sound weird but I really enjoy oatmeal cooked with dried nettles (so that they rehydrate as it cooks) and almond meal with butter. It is a lovely savoury dish. If you don't have dried nettles, but do have some fresh green leafy veg you enjoy it would work well with that too.
