All in all, a good day

ysabella_dolfin came over yesterday afternoon. We started a batch of bacon, smoked another, and sliced it up so that she went home with 4-5 lbs of freshly smoked, yummy bacon. She also draped the wife for an Italian dress. Lots of good chattage.

Then etaine_pommier stopped by for a drink, and the four of us ended up going out for a lovely dinner at a local Italian place.

It's like duck confit, but not as good.

( Why confit pork? Because it's fantastic. It's a way to make a store-bought pork loin, an item today that is otherwise impossible to cook well - it has almost no flavor and no fat - into a delicacy. )
