  1. Do not attempt a complex, multi-step recipe on a weeknight, especially when work has been extremely hectic and you are leaving late.
  2. Do not substitute different cuts of meat "because that's what they had".  Different cuts do not cook identically.
  3. You do not know how to fold into liquids properly.  A cake recipe that is only leavened by whipped eggs, when said whipped eggs are deflated by improper dry ingredient folding, becomes a brick.  A tasty brick, but still a brick.
Yes, I did know some of these already.  That makes it worse.

Number 3 reminds me of my first (and only) attempt at croissants. I ended up with crescent shaped bricks that crumbled if you looked at them cross-eyed. They were served at a family meal (after a tearful call to the hostess about the ruined bread and her assurances that I should bring them, anyway). The crumbs were so tasty (they should be with that much butter) my dad ate the last of them out of the basket with a spoon. One of my cousins (male) asked for years afterward how my buns were every time he saw me.
