Oct. 14th, 2007 08:44 pmWhen you are roasting a chicken in a smoker on a vertical roaster: make sure that the dryer is not running.
Because the vent directly faces where you put the smoker, and the air movement will cause grease dripping and massive flare-ups. Which means Cajun-style blackened chicken immolation.
(We caught it before it had gone too far, fortunately. The chicken didn't taste burned.)
