This week (really, next week but what the heck) 's Resolution Recipe: Oatmeal Muffins.

1 cup oats (I used quick-cook, but rolled work fine too apparently)
2 cups buttermilk (I used regular - see below)
1/2 cup brown sugar
4 Tbsp butter, melted
1 large egg
1 tsp baking powder
3/4 tsp baking soda
1/4 tsp salt
1 1/2 cups flour
1 cup raisins (I used 1 apple, minced)

In a small bowl, combine the oats and buttermilk. Cover and refrigerate overnight.

Heat the oven to 425. Combine the buttermilk mixture, brown sugar, butter, egg, baking powder and soda, and salt. Gently stir in the flour and raisins if using. Scoop into 12 muffin cups and bake for 20 minutes, until the tops are light golden brown. Remove from the oven, let cool for 5 minutes, then turn out of the pans.

What worked: Nice flavor. Oh, I added in some cinnamon and nutmeg because I'm like that. Not too sweet.

What didn't: This was a spur-of-the-moment thing so I didn't have any buttermilk, nor did I let it soak overnight. This meant that the muffins didn't muff properly - they were flat and the oats were perhaps crunchier than they should ideally be. Still nice though.

Will I make it again? I might. If I remember.

Hmm. We often have buttermilk on hand for the spontaneous making of pancakes or macaroni & cheese. I may have to use the remainder for these next time.
