It's hot, have a salad (redux)
Jun. 9th, 2006 07:37 amI wish to pay respect to Caesar Cardini - the 1924 inventor of the Caesar salad. Genius. And also to whomever perfected it by adding grilled chicken.
We've been getting lots of lettuce in our CSA box; four heads of romaine this last week. So I thought I'd try making a Caesar salad from scratch for the first time.
It's surprisingly easy. The dressing is essentially basic mayonnaise, although I added garlic and a couple anchovies in the food processor. It was a faboo way for the two of us to eat an entire head of lettuce. I would have added chicken, but we'd run out. It was still incredibly good.
