I've heard it both ways, and while my grandmother called it dressing, the current usage seems to be stuffing.

Stuffing would go in the bird except my family always ALWAYS bakes the dressing separately. We add onions, celery, and green apples to the Mrs. Cubbison's boxed mix.

stuffing (in the traditional sense) is a big ol invitation to food poisoning, so by all means, make a tangy bread-based side, but without the bacteria.

Do you avoid cookie dough and caesar salad because of the possibility of salmonella from raw egg? Do you cook your pork to the consistency of leather because of the six people who died last year from trichinosis?

Stuffing goes in the bird. "dressing", in the formal clothing sense doesn't happen for important holidays like Thanksgiving, which is casual clothing required (and loose fitting, too.

I never stuff any more. It's already difficult enough to get the thighs cooked before the breast dries out - why make that even worse?

(Note to self: Next time, cook bird breast-side-down for first 2/3 of time, then turn breast-up to finish.)
